• 8 pcs. country ribs
  • 1 teaspoon ginger
  • 1 (20 ounce) can pineapple chunks
  • 2 green onions, chopped
  • 1/4 cup dry cooking sherry
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar

Mix together dry sherry, soy sauce, ginger, green onions and 1/4 cup pineapple juice. Place ingredients in roasting pan or ovenware glass pan. Place ribs, meat side up, in pan with mixture. Bake for 1 hour and 15 minutes at 350, basting occasionally. Turn over ribs and bake for 20 minutes on the other side.

While baking, mix 1/4 cup pineapple juice with 1/2 cup loosely packed brown sugar and pineapple chunks In pan and heat. Pour over ribs; bake for 7 minutes. Turn over and bake 7 minutes longer, basting each side well.

Serves 2 to 3.
