Chicken and Poultry Recipes

Chicken wings with hot sauce, ranch dip and celery

Poultry is the most versatile protein in most kitchens, and these recipes cover it from weeknight to holiday. For everyday dinners there is a skillet chicken cordon bleu with cream sauce, a classic chicken pot pie, a creamy wild rice soup, Greek yogurt marinated kebabs and a grilled chicken salad with strawberries and candied pecans.

For Sundays and special occasions, try a lemon herb roast chicken, an herb butter roast turkey breast for a smaller holiday table, garlic rosemary Cornish game hens, or a pan-seared duck breast with cherry sauce, the poultry that eats like a steak. All chicken and turkey should reach 165°F; our poultry cooking times chart shows how long each cut takes.

Sandra Mills's recipe book adds ten more chicken dinners, from the family favorite she simply called Chicken Cooked with Stuff to Chicken Parisienne with green grapes, Sesame Chicken with apricot sauce, Oven Fried Hawaiian Chicken, Dijon Chicken with Pineapple, Lemon Chicken and an easy Oven Fried Chicken.

Common questions

What temperature should chicken and turkey be cooked to?
All poultry, including chicken, turkey, duck and Cornish hens, should reach 165°F in the thickest part, measured with a food thermometer.
How do I keep chicken breasts from drying out?
Pound them to an even thickness, do not overcook them, and let them rest for a few minutes before slicing. A yogurt marinade also helps.
Why is duck breast served pink when chicken is not?
Duck breast is a dark, steak-like meat that many cooks serve medium-rare. The USDA safe minimum for all poultry, including duck, is 165°F, so choose the doneness you are comfortable with.
