London Broil

  • 1 tablespoon butter or margarine
  • 2 cloves garlic, crushed
  • 2 medium onions, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons salad oil
  • 2 lbs. high quality flank steak, scored
  • 1 teaspoon lemon juice

Melt butter in skillet. Cook and stir onions and 1/4 teaspoon salt in butter until onions are tender. Keep warm over low heat.

Stir together oil, lemon juice, 1/2 teaspoon salt and the pepper, brush on top side of meat. Set oven control at broil and/or 550. Broil meat 2 to 3 inches from heat about 5 minutes or until brown. Turn meat, brush with oil mixture and broil just until rare, about 5 minutes longer.

Cut meat across grain at a slanted angle into very thin slices; serve with onions. 6 to 8 servings.
