Updated

Au jus means "with juice": a light, unthickened sauce made from the roast drippings, served in small cups for dipping slices of prime rib.

Make it while the roast rests.

Ingredients

  • Pan drippings from a prime rib roast (optional, for flavor)
  • 1 shallot, minced
  • 1/2 cup dry red wine
  • 2 cups beef broth
  • 1 sprig fresh thyme
  • 1 teaspoon Worcestershire sauce
  • Kosher salt and black pepper, to taste

Instructions

  1. Pour off the fat. Spoon off all but about 2 tablespoons of fat from the roasting pan.
  2. Cook the shallot. Set the pan over medium heat and cook the shallot 1 minute.
  3. Deglaze. Add the wine and scrape up the browned bits; simmer 2 minutes.
  4. Simmer. Add the broth, thyme and Worcestershire and simmer 8 to 10 minutes, until reduced slightly. Add any juices from the resting roast, season and strain.

Tips

  • No wine? Use more broth and a teaspoon of red wine vinegar.
  • Make it ahead with roasted beef bones or a little butter if you are cooking the roast at a friend's house.
