What's for dinner tonight?
These salads come from the recipe book of Sandra Mills, a member of our family who trained at Le Cordon Bleu in France. There is a classic Caesar made step by step with a coddled egg and fresh croutons, a make-ahead seven layer salad that serves a crowd, old-fashioned potato salad and cole slaw, two spinach salads, and a crunchy mandarin orange salad with sugared almonds.

A classic tableside-style Caesar salad: garlic oil, fresh croutons, a coddled egg, lemon, Worcestershire and anchovies, tossed with Romaine, blue cheese and Parmesan.
Spinach salad with chopped hard-boiled eggs and crumbled bacon, dressed with a sweet and tangy tomato soup dressing made the day before.
The classic make-ahead party salad: iceberg, chives, celery, water chestnuts and peas layered under Miracle Whip, Parmesan and garlic, chilled and tossed with chopped eggs. Serves at least 12.
Old-fashioned potato salad of tender cubed potatoes with grated carrot and onion in a creamy dressing of mayonnaise, vinegar, sugar and water shaken in a jar.
A simple cole slaw of shredded cabbage and carrots with chopped onion, dressed with the same creamy mayonnaise dressing as Sandra's potato salad.
A crisp salad of iceberg and Romaine with celery, green onions, mandarin oranges and sugared almonds, tossed with a sweet parsley vinaigrette.
Spinach tossed with diced red apple, sweet onion rings and hard-boiled eggs in a creamy bleu cheese, mayonnaise and sour cream dressing.
A classic lime gelatin mold made creamy with sour cream and studded with crushed pineapple, set in a 1-quart mold.
A creamy lemon gelatin mold with sour cream, whole thawed strawberries and crushed pineapple, set in a 6-cup mold or individual dishes.
A cooked cranberry relish of fresh cranberries simmered in sugar syrup until most of the berries burst, finished with cinnamon and orange marmalade.
