Spinach Salad with Bleu Cheese Dressing

This spinach salad from Sandra Mills's recipe book pairs crisp, unpeeled red apple and sweet onion with spinach and hard-boiled eggs, all tossed in a rich, creamy dressing of bleu cheese, mayonnaise and sour cream.

The sweetness of the apple balances the tangy cheese.

Ingredients

Dressing

  • 1/4 pound bleu cheese
  • 1 cup mayonnaise
  • 1/2 pint of sour cream

Salad

  • 1 pound of spinach leaves, carefully washed and torn into pieces
  • 1 red apple, not peeled, diced into cubes
  • 1 sweet onion, sliced into fine rings
  • 2 hard-boiled eggs, diced

Instructions

  1. Make the dressing. Combine the bleu cheese, mayonnaise and sour cream and refrigerate.
  2. Make the salad. Combine the spinach, apple, onion and eggs.
  3. Toss. Toss with the salad dressing and serve.

Tips

  • Dice the apple just before serving, or toss it with a little lemon juice, so it does not brown.
  • Wash spinach in several changes of water; it can be sandy.
