Updated

Sinangag is what happens to yesterday's rice in a Filipino kitchen. Lots of garlic is fried slowly until golden, then the cold rice is tossed in the fragrant oil.

It is the base of the classic "silog" breakfasts: garlic rice, a fried egg and a meat.

Ingredients

  • 3 tablespoons vegetable oil
  • 1 head garlic, cloves minced (about 1/4 cup)
  • 4 cups cooked white rice, chilled overnight
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced (optional)

Instructions

  1. Fry the garlic. Heat the oil in a large skillet or wok over medium-low heat. Add the garlic and cook, stirring, 4 to 5 minutes, until light golden. Scoop out half for topping.
  2. Add the rice. Raise the heat to medium-high, add the rice, breaking up clumps, and toss 5 to 6 minutes until hot and lightly toasted.
  3. Season. Season with the salt and pepper, top with the reserved garlic and green onions, and serve.

Tips

  • Cold, day-old rice is drier and fries without turning mushy.
  • Watch the garlic closely: it goes from golden to bitter in seconds.
