Updated

Turon is a favorite Filipino street snack: a banana wrapped in a spring roll wrapper, fried, and glazed in brown sugar that hardens into a glassy caramel.

Saba bananas are firmer than regular bananas and hold up to frying; just-ripe regular bananas or plantains work too.

Ingredients

  • 6 ripe saba bananas or 4 firm-ripe regular bananas, halved lengthwise (and crosswise if long)
  • 1/2 cup jackfruit strips, fresh or jarred (optional)
  • 12 spring roll wrappers
  • 3/4 cup brown sugar, divided
  • Water, for sealing
  • Vegetable oil, for frying

Instructions

  1. Fill. Roll each banana piece in brown sugar, set it on a wrapper with a few jackfruit strips, fold in the sides and roll up tightly. Seal with water.
  2. Heat the oil. Heat 1/2 inch of oil in a skillet over medium heat to about 350°F.
  3. Caramelize. Sprinkle 2 to 3 tablespoons brown sugar into the oil; it will melt and float. Fry the rolls in batches 3 to 4 minutes, turning, until golden and coated in caramel, adding more sugar for each batch.
  4. Cool. Lift onto a rack (not paper towels, which stick) and cool 5 minutes so the caramel hardens before serving.

Tips

  • Use a light hand with the sugar in the oil; too much at once can scorch.
  • Serve with vanilla ice cream for an easy dessert.
