Candied sweet potatoes are an easy holiday side to make vegan: the butter in the glaze simply becomes vegan butter. Maple syrup and a splash of orange juice keep the glaze bright, and baking uncovered at the end turns it thick and glossy.

Baste the slices a few times so every piece is coated.

Ingredients

  • 3 pounds sweet potatoes, peeled and sliced 1/2 inch thick
  • 1/2 cup vegan butter
  • 3/4 cup packed brown sugar
  • 1/4 cup maple syrup
  • 2 tablespoons orange juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Heat the oven. Heat the oven to 375°F. Arrange the sweet potato slices in overlapping rows in a 9 by 13-inch baking dish.
  2. Make the glaze. Melt the vegan butter in a saucepan with the brown sugar, maple syrup, orange juice, cinnamon, nutmeg and salt. Simmer 2 minutes, then stir in the vanilla.
  3. Bake. Pour the glaze over the potatoes, cover with foil and bake 35 minutes. Uncover, baste, and bake 20 to 25 minutes more, basting twice, until tender and the glaze is thick.
