Updated

Yorkshire puddings are a simple batter of eggs, flour and milk poured into sizzling-hot fat. They puff dramatically and come out crisp outside and tender inside.

The two secrets: a rested batter and very hot fat.

Ingredients

  • 3 eggs
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 cup beef drippings from the roast, or vegetable oil

Instructions

  1. Make the batter. Whisk the eggs and milk, then whisk in the flour and salt until smooth. Rest 30 minutes or up to overnight in the refrigerator.
  2. Heat the fat. Heat the oven to 425°F. Put 1 teaspoon drippings in each cup of a 12-cup muffin tin and heat in the oven 10 minutes, until smoking hot.
  3. Fill. Working quickly, pour the batter into the cups, about halfway.
  4. Bake. Bake 20 to 25 minutes, without opening the oven, until tall and deep golden. Serve right away.
