This easy corn casserole, also called corn pudding, sits somewhere between cornbread and souffle. It is a fixture at Thanksgiving and potlucks because it takes five minutes to stir together.

It is best warm from the oven, when the center is soft and creamy.

Ingredients

  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (14.75 ounce) can cream-style corn
  • 1 (8.5 ounce) box corn muffin mix
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Heat the oven. Heat the oven to 350°F and butter a 9-inch square or 2-quart baking dish.
  2. Mix. Stir together both cans of corn, the muffin mix, sour cream, melted butter and eggs until combined.
  3. Bake. Pour into the dish and bake 45 to 50 minutes, until golden and just set in the center. Sprinkle with cheese for the last 5 minutes if using.
  4. Rest. Let stand 5 minutes before serving.
