Glazed carrots bring color to a holiday plate and take only one pan. The cooking water reduces with butter and honey into a shiny glaze.

Ingredients

  • 2 pounds carrots, peeled and sliced on the diagonal 1/2 inch thick
  • 1/2 cup water
  • 3 tablespoons butter
  • 3 tablespoons honey
  • 1 tablespoon brown sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves or 1 tablespoon chopped parsley

Instructions

  1. Simmer. Put the carrots, water, butter and salt in a large skillet, cover and simmer 7 to 8 minutes, until nearly tender.
  2. Glaze. Uncover, add the honey and brown sugar and cook over medium-high heat, stirring, 5 to 7 minutes, until the liquid reduces to a glossy glaze that coats the carrots.
  3. Serve. Season with pepper and sprinkle with thyme or parsley.
