Tilapia is mild, inexpensive and thin, so it cooks in minutes. A light dusting of flour gives it a golden edge, and a pan sauce of butter, garlic and lemon made right in the same skillet finishes it.
Serve it with rice, couscous or a green salad for one of the fastest dinners on the site.
Season. Pat the fillets very dry. Season with the salt, pepper and paprika, then dust lightly with flour and shake off the extra.
Sear. Heat the oil and 1 tablespoon of butter in a large skillet over medium-high heat. Cook the fillets until golden, about 2 to 3 minutes a side, until the fish flakes easily and reaches 145°F. Move them to a warm plate.
Make the sauce. Lower the heat to medium. Melt the 3 tablespoons of butter in the skillet, add the garlic and cook 30 seconds. Add the lemon juice and capers, scrape up the browned bits and simmer 1 minute. Stir in the parsley.
Serve. Spoon the lemon butter over the fish and serve right away.
