Microwave Fish Fillet

A five-minute fish dinner: scrod or any thick fillet brushed with mayonnaise, topped with seasoned bread crumbs and microwaved on High.

Sandra Mills calls this a very easy recipe, and it is: butter a glass pie plate, brush a thick fillet of scrod or other white fish with mayonnaise, sprinkle it with seasoned bread crumbs and microwave it for 5 minutes.

The mayonnaise keeps the fish moist and holds the crumbs on.

Ingredients

  • Butter, for the plate
  • Scrod or any thick fish fillet
  • Mayonnaise
  • Seasoned bread crumbs

Instructions

  1. Prepare the plate. Butter a glass pie plate.
  2. Coat. Brush the fish with mayonnaise and lay it in the pie plate. Sprinkle with seasoned bread crumbs.
  3. Microwave. Microwave on High for 5 minutes.

Tips

  • Fish is done at 145°F, when it is opaque and flakes easily with a fork. Microwave power varies; thicker fillets may need another minute or two.
  • Scrod is young cod or haddock, a New England favorite.
