The air fryer gives pork chops a browned, slightly crisp crust without heating up the kitchen. A quick rub of brown sugar, smoked paprika, garlic and a little mustard powder caramelizes in the hot air.

Thick chops work best: look for boneless chops about 1 inch thick. Thin chops dry out before they brown.

Ingredients

  • 4 boneless pork chops, about 1 inch thick (6 to 8 ounces each)
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dry mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat the air fryer. Heat the air fryer to 400°F for 5 minutes.
  2. Season. Pat the chops dry and rub with the oil. Mix the brown sugar, paprika, garlic powder, onion powder, mustard, salt and pepper and press it onto both sides.
  3. Air fry. Lay the chops in the basket in a single layer, not touching. Cook 9 to 12 minutes, turning once halfway, until an instant-read thermometer reads 145°F in the center.
  4. Rest. Rest the chops 3 to 5 minutes before serving.

Tips

  • Cook in batches if the chops do not fit in one layer; crowding steams them.
  • Bone-in chops of the same thickness take 2 to 3 minutes longer.
