When the grill is covered in snow, the air fryer turns out a well-browned steak with almost no smoke. It will not char like cast iron, but the fast, hot air gives a good crust.

Let the steak sit out for 20 to 30 minutes first so it cooks evenly.

Ingredients

Steak

  • 2 ribeye or New York strip steaks, about 1 inch thick (10 to 12 ounces each)
  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon coarsely ground black pepper

Garlic herb butter

  • 3 tablespoons softened butter
  • 1 clove garlic, minced
  • 1 tablespoon chopped parsley

Instructions

  1. Prepare. Let the steaks stand at room temperature 20 to 30 minutes. Heat the air fryer to 400°F. Mix the butter, garlic and parsley.
  2. Season. Pat the steaks dry, rub with oil and season both sides with the salt and pepper.
  3. Air fry. Cook 8 to 12 minutes, turning once, until an instant-read thermometer reads 130 to 135°F for medium-rare (about 10 minutes for 1-inch steaks). The USDA guideline for steak is 145°F with a 3-minute rest.
  4. Rest. Rest 5 minutes, topped with the garlic butter, then slice.
