The chicken drippings run into the potatoes as everything roasts, so the potatoes come out golden and full of lemon and garlic flavor.
Green beans go on for the last 15 minutes, so dinner is one pan from start to finish.
Ingredients
- 8 bone-in, skin-on chicken thighs (about 3 pounds)
- 1 1/2 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, zested, then sliced
- 1 teaspoon dried oregano
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 12 ounces green beans, trimmed
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the oven. Heat the oven to 425°F.
- Toss. Toss the potatoes with 1 tablespoon oil, half the garlic and 1/2 teaspoon salt. Rub the chicken with the remaining oil, garlic, lemon zest, oregano, salt and pepper.
- Roast. Spread the potatoes on a large rimmed baking sheet, nestle the chicken in skin side up with the lemon slices, and roast 25 minutes.
- Add the beans. Scatter the green beans around the chicken and roast 12 to 15 minutes more, until the skin is crisp and the chicken reaches at least 165°F.
- Serve. Sprinkle with parsley and squeeze the roasted lemon slices over the top.
