The street-fair classic made easy: sweet or hot Italian sausage roasts on the same pan as the peppers, onions and potatoes, and the sausage drippings season everything.

Serve it as is, or pile the sausage and peppers into crusty rolls.

Ingredients

  • 1 1/2 pounds Italian sausage links, sweet or hot
  • 1 pound baby potatoes, halved
  • 2 bell peppers, cut into strips
  • 1 large onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar

Instructions

  1. Heat the oven. Heat the oven to 400°F.
  2. Start the potatoes. Toss the potatoes with 1 tablespoon oil and spread on a large rimmed baking sheet. Roast 10 minutes.
  3. Add everything else. Toss the peppers and onion with the remaining oil, oregano, salt and pepper and add to the pan with the sausages. Roast 25 minutes more, turning the sausages once, until they are browned and 160°F inside and the potatoes are tender.
  4. Finish. Drizzle with the balsamic vinegar and serve.
