Pork tenderloin cooks in about 20 minutes, so it is perfect for a sheet pan. The Brussels sprouts get a head start, then the pork and apples join them.

A spoonful of maple and Dijon brushed on at the end gives the pork a light glaze.

Ingredients

Sheet pan

  • 1 pork tenderloin (about 1 1/4 pounds)
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 apples, cored and cut into wedges
  • 1 red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper

Glaze

  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard

Instructions

  1. Heat the oven. Heat the oven to 425°F.
  2. Start the sprouts. Toss the Brussels sprouts with 2 tablespoons oil and 1/2 teaspoon salt and roast on a large rimmed baking sheet for 10 minutes.
  3. Add the pork. Rub the pork with the remaining oil, thyme, salt and pepper. Push the sprouts aside, add the pork, apples and onion to the pan and roast 15 minutes.
  4. Glaze. Mix the maple syrup and mustard, brush over the pork and roast 5 to 10 minutes more, until the pork reaches 145°F.
  5. Rest and slice. Rest the pork 5 minutes, then slice and serve with the vegetables and apples.
