Lemon, garlic and oregano are the heart of Greek home cooking, and they work beautifully on a pan of chicken and vegetables.

Serve with warm pita, rice or a cucumber and tomato salad.

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 bell peppers, cut into chunks
  • 1 red onion, cut into wedges
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup crumbled feta
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Marinate. Whisk the oil, lemon juice, garlic, oregano, salt and pepper. Toss with the chicken and let stand 15 minutes (or refrigerate up to 8 hours).
  2. Heat the oven. Heat the oven to 425°F.
  3. Roast. Spread the chicken, peppers and onion on a large rimmed baking sheet and roast 20 minutes. Add the olives and roast 8 to 10 minutes more, until the chicken reaches at least 165°F.
  4. Finish. Scatter with feta and parsley and serve.

Tips

  • Boneless breasts work too; cut them into large pieces so they do not dry out.
  • Add cherry tomatoes with the olives for extra color.
