The sweet potatoes get a head start, then the chops roast right on top of the vegetables so the juices season everything underneath.

Choose chops about 1 inch thick; thinner chops overcook before they brown.

Ingredients

  • 4 bone-in pork chops, about 1 inch thick
  • 2 medium sweet potatoes, cut into 3/4-inch cubes
  • 1 red onion, cut into wedges
  • 1 apple, cored and cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat the oven. Heat the oven to 425°F.
  2. Roast the sweet potatoes. Toss the sweet potatoes and onion with 2 tablespoons oil and 1/2 teaspoon salt on a large rimmed baking sheet. Roast 15 minutes.
  3. Season the chops. Rub the chops with the remaining oil, the paprika, garlic powder, thyme, remaining salt and pepper.
  4. Roast together. Add the apple wedges, nestle the chops on the pan and roast 15 to 20 minutes, until the chops reach 145°F.
  5. Rest. Rest 5 minutes before serving.
