A simple honey, Dijon and whole-grain mustard glaze does double duty: half goes on the chicken, half is drizzled over everything at the end.
Cut the vegetables small so they cook in the same time as the chicken.
Ingredients
Sheet pan
- 4 boneless, skinless chicken breasts (about 2 pounds), pounded to an even 3/4 inch
- 1 pound small red potatoes, cut into 3/4-inch pieces
- 3 carrots, sliced 1/2 inch thick
- 3 cups broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Honey mustard
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon whole-grain mustard
- 1 tablespoon olive oil
- 1 clove garlic, minced
Instructions
- Heat the oven. Heat the oven to 425°F.
- Start the vegetables. Toss the potatoes and carrots with the oil, half the salt and the pepper on a large rimmed baking sheet. Roast 10 minutes.
- Add the chicken. Whisk the honey mustard ingredients. Season the chicken with the remaining salt and brush with half the sauce. Add the chicken and broccoli to the pan and roast 15 to 20 minutes, until the chicken reaches 165°F.
- Finish. Drizzle the remaining honey mustard over the pan and serve.

Tips
